as if it was a burger.

Two years ago, I decided to become vegetarian and then vegan. It was the best I could do for myself, to feel good in my head and in my body.

So I started having fun veganizing those recipes you can't just stop eating. Burgers, for example. I first eliminated all the industrial alternatives, very tasty, indeed, but not the healthiest option. I looked for complete alternatives, which would bring me all that my body requires, and which allowed me to use them in classical recipes. At that time, the idea of just replacing the meat with a slice of tofu was unthinkable.

I found a recipe, guys, it's delicious.

Even if you are omnivore, I think you should try it out. It is not the same as meat, but it is tasty. I found it on Marie Laforêt's blog (which I love btw), and modified it a bit. If you want, you can of course change it yourself; use lentils, beans, another vegetable, ...

Ingredients, for 4 servings:

- 100g of tofu nature

- 150g of sweet potato

- some water

- 3tbs of corn starch (maïzena)

- 1tsp of baking powder

- 1tbsp of tahini (sesam paste)

- breadcrumbs

- 1tbsp of flour

- 1tsp of spices you like ( paprika, curry, cumin)

- salt, pepper

Let's begin!

Start by peeling the sweet potato an cutting it in small cubes, to let it cook faster. Put it in a small saucepan with a bit of water and let it cook until the potato is soft. Attention not to let it burn, if needed, add water and trow the surplus away at the end of the cooking. Mix the tofu in a blender, add the sweet potato and mix again. add the flour, the maïzena, the tahini and the spices. I also tried out to only crush the tofu with a fork, but I prefer when all is mixed. You decide.

You should get an homogeneous paste, soft and sticky. Pre-heat the oven at 180°C and form the burgers. Put the breadcrumbs in a bowl and cover the burgers with it. Then put them on a sheet with some olive oil and let them cook 15 minutes on each part.

You can use your burgers as simple patties, in a veggie burger or as nuggets. If you want you can freeze it and re-cook them in a pan or in the oven until they are hot. Just add it to a salad, and what a quick and healthy meal!
