Lemon cake tastes like heaven.
Everybody agrees. And sometimes, you just need a piece of lemon cake, and a cup of tea.
I was feeling like that, but no lemon cake at the horizon. So..let's bake one!

Ingredients:
200g of all purpose flour or whole wheat flour
125g of non-refined cane sugar
1/2 tsp of baking soda
1 tsp of baking powder
a pinch of salt
two organic lemons (use the juice and the zest)
200ml of water
1 tbsp of grounded flax seeds
85ml of vegetable oil
In a big bowl, mix the flour, the sugar, the baking soda, the baking powder, the salt and the lemon zest. Add the water, the lemon juice and the vegetable oil and mix it all together. Spread some coconut oil or any other oil in a cake pan, add the dough and bake at 180°C for 45 min.

If you want, you can make a lemon frosting made with icing sugar and lemon juice, or chop some almonds and scatter them on the raw dough for some decoration and crunchiness.
This cake is delicious, healthy, vegan and not too sweet. It has a delicious but not too strong lemon flavour. If you want, once the cake is bakes, put is upside down and do some holes under it with a fork. Then, add some lemon juice and let it soak the cake. It gives it a juiciness...and tastes like heaven!
