A Greens kinda Quiche

I did not really know how to call this recipe. My mom uses to cook this Greens Quiche, and I was missing it so much. I decided to try it, for the first time, with some advice. And even went a step further. I made my own crust. Well, it did not turn out as good as the bought one, but I was pretty happy of my first try.
This recipe is a healthy and delicious way to give to your body all the nutrients it needs. The greens and other vegetables provide you fibers, minerals, iron and so more. The tofu is full of healthy proteins.
Let's get straight into it!
Ingredients:
Leek, Spinach, Zucchini. Green beans
Tofu, Mushrooms
Salt, Pepper, Turmeric, Garlic, Onion
Whole wheat flour, Coconut oil, Water (or ready to bake quiche crust, or filo pastry)

Start by cutting all the vegetables. In a pan, fry the onions, the garlic and the spices, then add the green beans with some water and let them cook for 5 minutes. If you want to add carrots, it is the time to do so! After a moment add the other vegetables : greens, leek, zucchini, mushroom ...
While the veggies cook without any lid to let the water evaporate, put the tofu with a bit of water (depending on the kind of tofu, firm, extra firm) in a blender or a food processor and turn it into a cream. Add it with the vegetables and that's it.
Then make the dough. As I told you, mine did not turn out exactly as I thought it would. You can easily find recipes on the internet.
I personally used whole wheat flour and coconut oil and followed THIS recipe.
Put the flattened dough on a baking tray, add the vegetable-tofu mix and you're done. Bake it in the oven for 15 minutes at 200°C, then turn down at 180°C and cook for 15 more minutes.
If you don't make your own dough or freeze it (easy!), it is really fast and easy to do.
