Let's have a Buddah Bowl!

You know, vegan meal, steamed veggies, delicious chickpeas, just after your evening yoga class. Who would pretend more!?

Once I have been told by my dad : "People who practice yoga are weird in their own way."

I hope my recipe won't seem strange to you. I don't think so. It is just deliciously spicy roasted chickpeas, sweet potatoes, cauliflower, carrots, avocado and spinach. Who would not like it? For this recipe, you need:

-Chickpeas

-Avocadoes

-Spinach

-Sweet Potatoes

-Spices (cumin, paprika, salt, pepper)

-Carrots, cauliflower, eggplant, zucchini or any veggie you like!

-Mushrooms

The day before, soak your chickpeas in warm water with some baking soda (helps getting rid of the acid proteins, for more information, see here). Cook them in water, then roast them in a pan with your favourite spices.

Steam the veggies separately (or all together), I personally prefer doing it all separalety, to preserve their own taste. I use the same pot, and just start with what needs to cook for longer (carrots, sweet potatoes), and so on.

Then make your bowl!

For my pictures, I wanted it to look nice, but if I were alone, I would just put everything randomly in the bowl as it is cooked.

Facile comme bonjour!

My favourite sauce is the tahina-lemon sauce, but you couls make a creamy sauce, or avocado sauce.

-Lemon Juice

-Tahina

-Olive Oil

Stir well until smooth and poor on your veggies.

You can add seeds if you want.

I have been told it seems I eat nothing, and must always be hungry, but these are so filling! They are packed with loads of nutrients, good carbs and proteins. As the vegetables are steamed, feel free to add some oil on top. Raw olive oil is so good, or any other oil you like.

The best healthy, filling and easy recipe I know. Ideal to have a good meal using all the food left in the fridge!
