Oatmeal Pancakes

I have always thought of pancakes as a healthy breakfast. If you make them at home with ingredients you know and control the amount of maple syrup you cover them with, your body should be fine. But personally, I never found them quite balanced, after all, all it is is flour and plant milk. Oatmeal, on the other hand, was my favourite breakfast and gave me all the energy and nutrients I needed.

So I thought of combining the two of them (I am obviously not the first one to do so).

Ingredients:

45 g (1/2 cup) of oats

45 g (1/3 cup) of whole wheat flour (or any other flour such as rice, buckwheat, millet, ...)

1 dl (1/2 cup) of any plant-based milk you like

1/4 tsp of baking soda

1/4 tsp of baking powder

1 tbsp of chia seeds in 5 tbsp of water, soak for a few minutes

The oats are rich in calcium, fibers and protein (16g per 100g).

The chia seeds have a high calcium content as well, contain a lot of omega-3 fats and have 18 of the 22 amino acids composing a protein. If we only look at cooking, they easily replace eggs in any recipe (1tbsp chia / 5tbsp water is the equivalent of one egg).

You have here a breakfast that is both tasty and balanced, perfect to start the day.

Basically, mix all your ingredients in a bowl until smooth and cook your pancakes in a pan with vegetable oil until they are golden.

Then you can get creative with your toppings. I used a banana, chocolate chips and maple syrup, it is up to you if you want to make a fruit sauce for example.

The recipe makes pancakes for one person (at least I ate them all!), around 8 pieces. If you have some leftover dough, you can cook the pancakes and store them, ready to eat later in the day.
