My favourite confort food is definetely a red lentils Indian curry. Sweet and warm, soft and spicy. With loads of vegetables and rice, served in a bowl, eaten with a spoon.

Here is my Indian Curry recipe that I made fat free. This makes two servings.
I used:
Brown basmati rice
Red lentils
Carrots
Zucchini
Sweet pepper
Indian curry powder
Salt and pepper
Garlic

At first, I rinse my rice. This step prevents it from being too sticky. Then, cook one cup of rice with two cups of water. The cooking time ant the proportions may vary from rice to rice. Make sure to check on the package.
While the rice is cooking, soak your red lentils in water with some baking soda. This helps remove the acid proteins and avoid bloating. If you want to know more about this subject, read here.
Cut the vegetables in small pieces, or just as you like them. Put them in a second pot with some water, the garlic and the spices (salt, pepper, turmeric and the curry). If you want, you can add a tablespoon of olive oil and roast the garlic, which makes the recipe even tastier. I personally prefer to add oil at the end, so I can take full advantage of its properties.
Do not forget your rice, check it and stir to prevent it from sticking on the bottom of the pot.

Let the vegetables cook, and when they are almost ready to eat, add the red lentils. Make sure to rinse them well and throw away the water they have soaked in. Add them to the vegetables, as well as some water or vegetable broth (I'd rather use water than the bougt one), or as an alternative, use coconut milk for a creamy curry. The lentils will cook very fast, as they were previously soaked.
Now the rice is cooked and the curry is ready. All you have to do is serve and enjoy!
